At Greenwich High School, muffins are a big favorite. They are baked daily and served warm and fresh.

Muffingate In order to keep the muffins on the menu, last year the high school opted out of participating in the Healthy Food Certification program. These muffins did not follow Connecticut Nutrition Standards because they were too big. This opt-out meant a loss of a 10 cent per lunch reimbursement amounting to $70,000 in revenue.

At this month's meeting, the Board of Education decided to opt back into the Healthy Food Program while also keeping the muffins. How did they do it? They made the muffins smaller. Brilliant.

Between the Lines: Proof that you can have your muffins and eat them too.
