The Greenwich Time reports that Dave Corbo and John Bosco, co-owners of the two Corbo’s Delis on Washington Boulevard in Stamford and one on West Putnam in Greenwich, will take over the Griff restaurant this spring.
The new restaurant is called the Clubhouse at the Griff and it will open for business in mid-April, Bosco said. The Cobber North, an outpost of the Cos Cobber, had occupied the restaurant since 2020, but its owners did not renew the operating agreement with the town at the end of 2023.
Corbo’s Southside Deli in Stamford was featured on Diners, Drive-in and Dives last year. Jonathan Corbo, Dave’s brother, is one of the co-owners of Grigg Street Pizza on Greenwich Avenue, which was also on “Triple D” last year. Bosco said he and Corbo hope to establish their new northern spot as a culinary beacon that draws people in from other parts of town for everything from private parties to a quick lunch.
“It'll be great for the golf season and eventually it'll be a place where you want to come and have dinner anytime,” Bosco said. “We want to make it more of a destination to come to eat.”
